What is the Illness Celiac or Celiaquía?

This illness is characterized for the serious inflammation and chronic of small intestine; because the person is permanent intolerant to gluten. This condition obstructs the absorption of important components of food; an important percentage of patients (75%) aren’t diagnosed because in Colombia it is unknown the prevalence this mean it isn’t very frequent because this condition doesn’t have medical analysis. Some people have problems with their health, it can be for different reasons; for example, if you eat bad, if you don't exercise or simply if you’re born with this condition named congenital illness; currently there are a bunch of illnesses such as the Diabetes, Anemia or Obesity; I will talk about and explain this illness because it’s strange and maybe you don't know about this.

The illness named Celiaquía is present in some people intolerant to gluten. This illness is produced, in your childhood or in your youth; the people that have this condition can't eat products or foods with this protein, this protein is present in the flour of various cereals, fundamentally the wheat; but also the oat, the barley, the rye or any of its varieties. The person that has this illness needs to eat a diet without gluten. Researchers say that some foods as the bread, the cookies, the pastries, the pasta, or the beer contain this protein; other products such as sauces, canned meat, or candies that can have in its ingredients; a few advantages are with this diet: symptoms disappear, the people feel excellent in their health, the people can know other foods, for example; the Quinoa that is better than the protein, in addition you can find and eat fresh products; in turn reduce the gluten helps you lose weight.

The most important consequence of this condition is that when you have this illness you’re starting to be undernourished no matter how much consume. It was believed that it was an illness little common and it affected mainly children currently it affects approximately 2-3% of the general people. The first descriptions about of Celiacos were made over the centuries I and II a.D by the Greek doctor Areteo of Capadocia; said “… A Celiac illness of nature chronic…” Since then the derivative name of the Greek Word Koiliakos (disorder of the intestine).

In 1888, Samuel Gee in Great Britain, did the first description clinical of the Celiaquía illness, it was done with big rigour and specific details, suggesting that “The patient can be completely healed, it has to be through of a diet”. The biggest progress was in 1950 The Dutch pediatrician Willem-Karel Dicke showed in his doctoral thesis, that if you exclude the wheat, the oats, and the rye; the celiac illness will be decrease drastically. In 2008 the Ministry of Safety and Consume presented the new protocol of premature detention of the Celiaquía with the objective that the professionals have access to new knowledges about the Celiac Illness. The information of the last five years, showed that this Illness is more predominant and it can be identified in two of each 133 persons in this country; this mean that this condition was improved in the last decade.

The conclusion is that in the last years researchers have been published that if the people exclude of their food or diets the Gluten this won’t be a problem for nobody with this condition, and in turn with the big scientific progress you can find in any products indications about its contents or absence of gluten; the names for these products are:

1. OATS: The product has pure oats.

2. 100: The product has until 100 mg/kg of gluten and doesn't have pure oats.

3. 100/OATS: The product has until 100 mg/kg of gluten and pure oats.
